Sweet Pongul
(Sakkarai Pongal)
Ingredients:
- Raw rice - 1 cup
- Water - 2 and 1/2 liter
- Moong Dal - 1/2 cup
- Jaggery - 500 g
- Cashew nuts
- Raisins
- Ghee - 4 to 5 tbsp
- Cardamom powder - 1 tbsp
Prep steps:
- Take raw rice and wash it with water
- Soak the rice and leave for 15 minutes
- Take water in a pan
- Add the moong dal and rice
- Mix it well
- Cook it completely for about 20 minutes (You can use a rice cooker as well)
- Add ghee, mix, and keep it aside
- Take ghee (1 spoon) in a pan
- Put in the cashew nuts and raisins
- Add cardamom mix and keep aside
- Take jaggery and water in a pan
- Let the jaggery completely dissolve
- Add the jaggery mixture in the cooked rice and add roasted nuts and raisins
- Mix it all well and cook for one minute
- Turn off the stove and serve the hot pongal
- Enjoy!
