Nentra Pazham Pancake
Nentra Pazham is one of the common types of banana available in kerala. Pazham means banana. here I have combined this fruit with one of the most well known and classic breakfast foods, resulting in a simple, healthy, and delicious food.
Ingredients:
- Nentra Pazham (Plantain) - 1
- Egg - 1
- Milk -1/2 cup (This is how much I use; if you want more, add slightly more)
- sugar/ jaggery powder - 2 tbsp (Add more if you would like)
- salt - a pinch
- wholewheat flour or oat flour - 3/4 cup
- flaxseed powder - 1 tsp
- cinnamon - 1/4 tsp
steps:
- Put all the ingredients into the blender
- Blend until it reaches a smooth consistency
- This will be your pancake batter
- Heat a pan
- Pour the batter on to the griddle
- Cook until bubbles form on the edges are dry for about 2-3 minutes
- Flip and cook until the other side is browned
- Repeat with the rest of the batter
- Enjoy!
