                                                                           Oats Cake

This is a recipe where a great taste blooms from simple ingredients. Along with being very simple to make, it is a healthy snack and is also perfect for gluten free people as well! I enjoy this cake with my evening cup of hot tea, making for a very delightful snack.

Ingredients:

  • Rolled oats - 1 cup
  • Salt - 2 pinches
  • Apple - 1 big one or 2 small ones
  • Carrot - 1 big one or two small ones
  • Pitted Mejdool Dates - 6 (You can add more if you want)
  • Cinnamon powder - 1/4 tsp
  • Nutmeg - 2 pinch
  • Sugar - 4 tbsp (You can also use brown sugar or palm sugar)
  • Butter - 1 tbsp
  • Egg - 2
  • Coconut flour/Almond flour - 1 and 1/4 tbsp
  • Baking powder - 1/2 tsp or 1 tsp
  • Chopped nut (walnuts or cashewnuts) - As per your taste; this is optional

Prep steps:
  1. Take one cup of rolled oats, then put it into the food processor or blender. Grind well.
  2. Then transfer the oat powder to a glass bowl
  3. Add salt, cinnamon powder, coconut flour, and baking powder
  4. Mix well and keep aside
  5. Take another bowl
  6. Add two eggs, beaten well (Use whisk or fork).
  7. Add sugar (optional)
  8. Mix again, then keep aside
  9. Cut the carrot/s and apple/s into pieces
  10. Then add them and the dates into a chopper or food processor
  11. Transfer all these chopped ingredients into the egg mixture, then mix well
  12. Add this wet mixture to the oat flour
  13. Lastly, add chopped nut and mix well
  14. Take a baking pan and grease with butter
  15. Then add cake mixture to the pan
  16. Flatten it evenly using a spatula
  17. Decorate with nuts (I use cashewnuts)
  18. Bake for 35 minutes at 180°C/360°F
  19. Take it out of the oven and leave to cool
  20. Cut into pieces, serve, and enjoy
Extra notes:
  • Oats are a great source of dietary fibers, which can help with healthy digestion and regulating blood sugar levels
  • Oats are also rich in antioxidants which improve heart health and support weight management
