🧁Nutri - Mix Muffin (Healthy Muffin for kids)🧁

 

                                         Nutri - Mix Muffin

Preparation time: 30 - 40 minutes

Ingredients:

  • Amrutham podi (Nutri mix powder from Kerala, but you can use whole wheat flour, oats flour, or almond flour) - 3/4 cup
  • Egg - 1
  • Sweetened condensed milk - 5 tbsp
  • Milk - 3 tbsp
  • Oil - 3 tbsp
  • Baking powder - 1/2 tsp
  • Salt - A pinch
  • Cinnamon powder - A pinch
  • Chocolate chips (or chopped nuts) to garnish
Preparation: 
  1. Pre-heat the oven to 180 degrees and put cupcake liners in the muffin tray 
  2. In a mixing bowl, crack an egg
  3. Add sweetened condensed milk and mix well with a hand whisk
  4. Add oil and vanilla essence, and whisk until combined.
  5. Place a sieve on top and add dry ingredients through it
  6. Whisk until it is combined, then fold the batter.
  7. Pour the batter into muffin liners, and sprinkle chocolate chips on top
  8. Bake it for 20 - 25 minutes until it is puffed up and the top has a slight golden color.
