🧁Nutri - Mix Muffin (Healthy Muffin for kids)🧁
Nutri - Mix Muffin
Preparation time: 30 - 40 minutes
Ingredients:
- Amrutham podi (Nutri mix powder from Kerala, but you can use whole wheat flour, oats flour, or almond flour) - 3/4 cup
- Egg - 1
- Sweetened condensed milk - 5 tbsp
- Milk - 3 tbsp
- Oil - 3 tbsp
- Baking powder - 1/2 tsp
- Salt - A pinch
- Cinnamon powder - A pinch
- Chocolate chips (or chopped nuts) to garnish
Preparation:
- Pre-heat the oven to 180 degrees and put cupcake liners in the muffin tray
- In a mixing bowl, crack an egg
- Add sweetened condensed milk and mix well with a hand whisk
- Add oil and vanilla essence, and whisk until combined.
- Place a sieve on top and add dry ingredients through it
- Whisk until it is combined, then fold the batter.
- Pour the batter into muffin liners, and sprinkle chocolate chips on top
- Bake it for 20 - 25 minutes until it is puffed up and the top has a slight golden color.
