Pumpkin Muffins

Ingredients:
  • 1/2 cup pumpkin puree
  • 1 cup plain Greek yogurt
  • 1/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups sprouted whole grain oats
  • 1/4 tsp nutmeg powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 cup oil
  • 1/2 tsp baking soda
  • 1/3 cup semi sweet chocolate chips

Steps:
  1. preheat oven to 350 degrees F
  2. Add oat flour, baking powder, baking soda, spices, and salt in a bowl
  3. mix well and set aside
  4. in another bowl, add pumpkin puree, brown and granulated sugar, eggs, Greek yogurt, and vanilla extract
  5. mix everything well using a hand whisk
  6. add chocolate chips in the first bowl, then mix the two together
  7. fill muffin pans lined with muffin liners with the batter
  8. bake in the oven at 350 degrees F on the middle rack for 25-30 minutes
cool for 5 minutes, then enjoy!
